Who doesn't love pizza or grilled cheese? Both of them are two of my favorite things, probably because I am crazy about cheese and pepperoni. This one of my favorite quick lunches/snacks for my kids (okay for me too). It's easy and a fun new way to look at grilled cheese. Add whatever you like on your pizza. I even added mushrooms to mine (yes it's one of my favorite things too). :) Even dip it in a little pizza sauce and its gooood.

Pizza Grilled Cheese
4 slices of bread
butter or margarine
4 slices of mozzarella cheese
pepperoni (I used reg and cut in half but mini size would be good too)
Italian seasoning or basil
Parmesan cheese (opt)
pizza sauce for dipping
*Warm a medium/large skillet over medium heat. Butter each piece of bread on one side. When skillet is hot place a piece of bread butter side down on the skillet then add one slice of cheese and small shake of Italian seasoning or basil (add a small shake of parmesan cheese here too if desired). Top with a desired amount of pepperonis (I used about 8 -10 whole regular pepperonis per sandwich) If any other toppings are desired, add now. Add another slice of mozzarella and top with slice bread butter side up. Repeat with second sandwich. When bottom slice is golden brown then flip over carefully. Once both sides are brown remove from pan cut and serve with pizza sauce if desired. Make 2 sandwiches

Just made these for me and my hubby. Changed it a bit, but still basic idea. I used fresh mozzarella and sliced it, used turkey pepperoni (70% less fat), and I actually have a seasoning called "Pizza Seasoning" so I used that.
It's very good and I'll definitely be making this again! Thanks for the wonderful idea. :)

Did you cook the pepperoni first?
Instead of pepperoni, can I use beef/chicken that cut it into smaller pieces?
@ Zee I don't cook the pepperonis first but if you wish to you can lay them out on a paper towel or paper plate and microwave just a few seconds and blot with more paper towels. As for using beef or chicken, you can use anything you like. The skys your limit, just besure its precooked. :)

Just made this for lunch. Added some garlic to the butter and was very good! Wonder if you could also use olive oil instead of butter?
@Angela I don't see why you couldn't use olive oil, just make sure its not extra virgin. :)
OMG! When I was a child, the PTA at my elementary school used to serve these to the students once a month and they called them "Pizzawiches!"
